Tres Leches Cake With Peach Whipped Cream Filling

So recently, I tried my hands at making a Tres Leches Cake (Milk Cake). I found it not even that hard to make, though, I kind of cheated by using Duncan Hines Cake Mix. I was making this cake for my boyfriend's birthday. Unlike my mom, who can make cake from scratch, I absolutely need the help of cake mixes.

So I had to search around online to find the right recipe for the Leche sauce and I came upon one on the website of Betty Crocker. So I based mine on their recipe.

My version contains a peach whipped cream filling and I used buttercream to decorate it. The recipe for the peach whipped cream filling and buttercream is located at the bottom of the page.

Here it goes:

You will need this:

  • Either a yellow cake mix, white cake mix, vanilla cake mix, or if you want to go fancier, French Vanilla cake mix from any brand. I have no idea if other flavors work well with the leches. 
  • 1 12-fluid ounces can of evaporated milk
  • 1 14-ounce can of condensed milk
  • Whipping cream (1 pint should work)
  • (2) 9-in cake pans 
  • Buttercream frosting (I used the Wilton brand ones that you can buy from an Arts & Crafts store like A.C. Moore)
  • 1-2 cans of peach slices, drained
Ok, so now you got these items. Let's begin!
  1. Follow the directions on the cake mix packaging. Bake according to the directions.
  2. Meanwhile, in a medium or large bowl, mix 1-cup whipping cream, one can each of evaporated and condensed milk. Whisk it until well-blended (when you no longer feel the condensed milk). Cover with plastic wrap and refrigerate it until ready to use.
  3. Once the cake is done (insert a toothpick and if it comes out clean, then it is done), take it out of the oven and let it cool on the counter or table. 
  4. Once it cools down, level out the cake using a cake leveler (by Wilton) or a serrated knife. 
  5. Take the tres leches sauce and pour it over the cakes. Set the cake aside. Let it stand for about 1 hour.
Assembling the cake:
You can leave it as is or decorate it.
  1. Pick one cake and lay it on top of a cake board (you can find those at your local arts and crafts store or just make one out of cardboard, just don't forget to cover it with plastic wrap).
  2. Take the Peach Whipped Cream filling and spread it across the top of the bottom cake, covering it. If you do not use it all, it is fine to eat it as is or you can use it in place of the buttercream frosting
  3. Take the second cake and lay it on top.
  4. If you are using the buttercream frosting, spread the buttercream evenly around the cake. If you do not use the buttercream frosting, you can use the Peach Whipped Cream in place. Just spread the cream evenly over the top of the cake. If you prefer to use other types of frosting, that will work. 
  5. Refrigerate the cake until ready to serve or serve immediately.

To make the Peach Whipped Cream filling:
  • Take the remainder of the whipping cream and pour it into another medium/large bowl. Add some sugar and if you want, vanilla extract.
  • Using an electric mixer, whip the cream until a firm peak forms. Do not over-beat the cream, otherwise it will become to liquidly.
  • Once the cream forms a stiff peak, carefully add the peach slices and using a spatula, fold the peach slices into the whipped cream. Cover the bowl with plastic wrap and refrigerate it until ready to use.
Buttercream Frosting (I used Wilton Buttercream Frosting mix):
  • Follow the directions on the box. You can add some vanilla extract if you are not the buttery taste type, but not too much otherwise it will ruin the buttercream frosting.

TIPS:
  • To avoid the cake from becoming very soggy, let the cake completely cool down before pouring the sauce on it. My coworker, who is an amazing baker, recommends letting the cake cool down overnight and not pouring the sauce right away.
  • The tres leches sauce will be very sweet. If you're not a sweets-loving type of person, you may want to adjust the amount of sugar to your liking.
The finished result. I cannot decorate cakes well, hence the sad face.
