I made tacos last night and I had some leftovers from it. I am not much of a leftovers person (I like making food and eating it the same day). So instead of letting them go to waste (or rot), I made tonight's dinner with it. I got inspired by the recipe on a Knorr Rice Side package.
Ok, this recipe isn't really new (I'm pretty sure a bunch of you have already done this), and there wasn't anything different about it. This recipe does not require having any leftovers.
Ingredients:
- 1 lb. lean ground beef (93% lean and 7% fat is best recommended)
- 1 packet Knorr Fiesta Sides Spanish Rice
- Diced tomatoes (about 1 cups should do)
- 2 cups shredded lettuce
- 1 cup diced onion
- Handful of Mexican cheese
- 1 Taco seasoning packet*
- Taco sauce*
*You can buy a taco dinner kit or buy them separately
Optional Ingredients:
- Taco shells
- Canned beans (black or pinto)
- Sliced jalapeƱos (I bought the jar ones since I don't like fresh ones as much)
- Hot sauce- either store bought or homemade
Directions:
- Brown the ground beef in a skillet. Drain. For this part, you can either mix 1 cup of water with the taco seasoning packets or add it directly to the beef. Mix the beef and seasoning until well blended. Remove from heat and set aside.
- Cook the rice sides according to the package.
- Get a large platter and assemble in this pattern
- Rice
- Ground beef
- Beans (if you are using any)
- Diced onion
- Diced tomatoes
- Shredded lettuce
- Cheese
- Sliced jalapeƱos (if you are using any)
- Drizzle the taco sauce and hot sauce (if you are using any).
- Serve with taco shells or tortilla chip.
